Strawberry basil flatbread perfect for a party
STRAWBERRY BASIL FLATBREAD
This strawberry and basil flatbread is the perfect easy and quick appetizer for your summer parties or for a quick dinner. These flavors pair perfectly with any of your favorite grilled entrees and will help keep you satisfied until the grill is done. Once you get the hang of this recipe, you can switch up the fruit and herb flavors for even more variety. This flatbread can also be topped with different protein options for a more hearty and filling dinner.
STRAWBERRY BASIL FLATBREAD
YIELD: 4 servings
INGREDIENTS
2 naan or flatbread rounds
½ c ricotta or mascarpone cheese
1 c fresh strawberries, sliced
¼ c fresh basil leaves, torn
1 T balsamic glaze
1 T honey (optional)
Olive oil for brushing
Salt and pepper, to taste
INSTRUCTIONS
1. Preheat oven to 375°F. Place the naan or flatbread on a baking sheet and lightly brush with olive oil.
2. Spread a thin layer of ricotta or mascarpone over the flatbread. Arrange the sliced strawberries evenly on top.
3. Bake for 8-10 minutes, or until the flatbread is warm and slightly crisp.
4. Remove from the oven and top with fresh basil. Drizzle with balsamic glaze and honey, if you like. Season lightly with salt and pepper.
5. Slice into wedges and serve warm or at room temperature.
VARIATIONS
- Add sliced prosciutto or chicken on the ricotta before adding the strawberries
- Use blue cheese, feta or goat cheese for a more tangy flavor
- Add candied nuts or caramelized onions to enhance the sweetness
- Arugula or mint can replace the basil
- Peaches or nectarines in the summer, or figs when they are ripe
